I really do Like Eggplant but I admit I run out of ways to cook it then I thought why not Grill it and I came up with this Recipe, it's very good. Try this as an accompaniment to another grilled food, especially fish. That way, you can prepare both of them at the same time.

What you Need:
1 large Eggplant or 2 small
Olive Oil
A very Little Sea Salt
Pepper to Taste
Italian Seasoning
Dressing Mix:
2 Garlic Clove Minced
4 Tbsp Italian Dressing
4 tbs mint leaves crushed

Directions:
Preheat the grill.
Remove the stem end of the eggplant and slice it lengthwise into 1/3 of an inch slices.
Season 1/4 cup olive oil with salt and pepper and Italian Seasoning and lightly brush...
