Hearty Chicken & Dumplings

A hearty soup filled with veggies, tender chicken, and herbs, topped with wonderfully fluffy bread dumplings!

Soup:
3 tbsp. olive oil
3 boneless, skinless chicken breasts
1 large yellow onion, coarsely diced
4 carrots, peeled and sliced
4 ribs celery, trimmed and sliced
1 clove garlic, minced
1-1/2 tsp. dried thyme
2 quarts low-sodium chicken broth
1 bay leaf
1 c. frozen peas
1/4 c. finely chopped flat leaf parsley
Salt and Pepper, to taste

Dumplings:
1 c. all purpose flour
1-1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. dried thyme
1/4 tsp. black pepper
1 tbsp. unsalted butter, at room temperature
1 large egg, beaten
1/4 c. buttermilk, cold
