Herbed Potato Patties

Easy, fancy hash browns!

2 large potatoes
1 tablespoon olive oil
3 chopped green onions
2 1/2 teaspoons dried thyme
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup shredded mozzarella
1. Wash the potatoes and coarsely shred (I used a cheese grater). 2. Mix all ingredients. 3. Heat and coat skillet with non-stick spray. 4. Form small patties with the potato mixture and flatten onto skillet. 5. Cook at least 5 minutes per side, or until the potato patties are cooked through. 6. Keep warm in the oven.
