Holiday Cut-out Cookies

These cut-out cookies are fun to make and fun to eat! A hint of nutmeg, lemon and almond make them special.

3 c. flour
1 c. margarine
1 c. sugar
1/8 tsp.salt
½ tsp. ground nutmeg
2 eggs beaten
4 tbsp. milk
1 tsp. baking soda
1 tsp. vanilla
½ tsp. lemon extract
3 c. powdered sugar
3 tbsp. softened butter (or margarine)
¼ to ½ tsp. almond extract
3 to 6 tbsp. milk
food coloring as desired
In a large bowl, mix the flour and margarine together as for pie-crust. Add sugar, salt, nutmeg. Make a shallow well in the center and add eggs. Mix milk with baking soda and add to flour/egg mixture along with the vanilla and lemon extract. Mix well. Dough will be moist. Chill at least 4 hours or overnight. Roll out and cut (Add more flour as needed as you roll…) Bake at 300° - 325° for approx. 8 minutes (use slightly greased cookie sheets). Cool before frosting. To make the frosting, mix powdered sugar, almond extract and milk to a spreading consistency. Add food coloring as desired. Decorate and let frosted cookies sit a bit to set the frosting before placing in storage container. When cool, spread with powdered sugar icing:
