Homemade Fried Rice

Delicious homemade fried rice.

3 tablespoons unsalted butter, divided
2 eggs, whisked
2 medium carrots, peeled and diced
1 small yellow onion, diced
1/2 cup frozen peas
3 cloves garlic, minced
black pepper, to taste
4 cups cooked and chilled white rice
3 green onions, thinly sliced
1/4 cup low sodium soy sauce
1/2 teaspoon toasted sesame oil
In a large skillet melt 1/2 tablespoon butter over medium high heat. When butter has melted add eggs and cook until scrambled. Transfer to a plate and set aside. Add 1 tablespoon butter to pan and melt....
