Homemade Marshmallows (no corn syrup!)

These soft pillowy marshmallows are nothing like the ones you buy in a bag! Making them yourself lets you choose the flavoring (you can replace vanilla extract with any other extract), plus you can decorate them if you would like!

2 tbsp unflavored gelatin
1/2 cup cold water
pinch salt
2 cups granulated sugar
3/4 cup water
1 1/2 tsp vanilla extract
