Homemade Meyer Lemon Curd

Delicious lemon curd using the amazing Meyer lemons.

1 cup fresh Meyer lemon juice (regular lemon juice will work fine too)
1 1/2 cups sugar
4 large eggs
4 large egg yolks
2 tsp finely grated lemon zest
1/8 tsp salt
1 cup COLD unsalted butter, diced
