This is my friend Pauline’s famous and incredibly simple Honey Crisp Pie- it’s light and fresh and so delicious! Whenever she makes it, it disappears instantly! The secret is to use really good apples and to not overcook the pie! She doesn’t use any spices and that lets the apple flavor shine though.

For the crust (or you may buy crust to save time):
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
1 stick unsalted butter, chilled and cut into pieces
For the pie:
4 or 5 medium to large Honey Crisp Apples, peeled, cored and sliced into 1/4? thin slices
1 stick butter
1/2 cup white sugar
1/2 cup brown sugar
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
1 stick unsalted butter, chilled and cut into pieces
For the pie:
4 or 5 medium to large Honey Crisp Apples, peeled, cored and sliced into 1/4? thin slices
1 stick butter
1/2 cup white sugar
1/2 cup brown sugar
Preheat oven to 350 degrees.
Make pie dough. Mix flour, salt and sugar in a medium-size bowl. Cut butter into pieces. With a pastry blender, cut in butter, working until mixture forms little balls.
