Honey Sesame Baked Chicken

Honey sweetens the recipe just a tad while the soy sauce adds that salty umami taste. The nuttiness of the sesame seeds is exactly what is needed to take this recipe up a notch from being boring chicken to a memorable meal.

1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
sea salt and black pepper (to taste)
2 eggs (beaten)
½ cup almond meal (or panko crumbs)
? cup honey, or more, to taste
2 tablespoons soy sauce
1 teaspoon garlic powder
1 tablespoon cornstarch
1 tablespoon Sriracha (optional)
2 green onions, thinly sliced (optional)
2 teaspoons sesame seeds (optional)

Preheat oven to 400(F) degrees. Prepare a 9x13 baking pan with nonstick spray.
