A delicious Caribbean twist to the cobb salad, this #HotSummerEats Calypso Caribbean Cobb Salad has hearts of palm, pineapple, and jerk marinated chicken; transporting you to the islands.

For Chicken:
1 pound chicken breast
1/3 cup red onion
2 tablespoons fresh thyme
2 tablespoons lime juice
2 tablespoons cider vinegar
2 tablespoons brown sugar
1 tablespoons ginger
1 tablespoons minced garlic
2 teaspoons Spicy Calypso Kick
1 1/2 teaspoons cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
For Dressing:
1/3 cup orange juice
1/4 cup lemon juice
1/4 cup honey
1 tablespoon cider vinegar
1 tablespoon minced jalapeno
1 teaspoon minced garlic
1 teaspoon onion powder
1 teaspoon fresh thyme
For Salad:
4 cups romaine lettuce
1 cup pineapple chunks, drained
1 cup sliced hearts of palm
1 cup black beans, rinsed and drained
1 avocado, thinly sliced
4 hard boiled eggs, quartered
