Huckleberry Cream Cheese Mini Pies

Pecan shortbread crust, sweetened cream cheese, topped with a delicious huckleberry sauce. These cute little pies are baked in muffin tins so they are just the perfect size. Try these with huckleberries like I did or substitute your favorite berry.

crust:
1 cup flour
1/2 cup butter- softened
1/4 cup brown sugar
1/2 tsp. salt
1/2 cup chopped pecans (optional)

cream cheese filling:
8 oz. cream cheese (1 package)- at room temp.
1/2 cup powdered sugar
1 tsp. vanilla

berry topping:
1 cup frozen (or fresh) huckleberries
3/4 cup sugar
1/2 cup cold water
3 tbsp. corn starch
For the shortbread crust combine all ingredients (flour, brown sugar, salt, butter,pecans) and blend with a fork until well combined. Press a couple tablespoons of the crust into the bottom of each cupcake...
