Delicious hummingbird cake packed with fruit and walnuts and smothered with a rich cream cheese buttercream frosting

250g unsalted butter, at room temp
350g caster sugar
3 eggs
2 tsp vanilla extract
375g standard flour
3/4 tsp baking soda
1.5 tsp cinnamon
3 over ripe bananas
1x medium sized tin (439g is our standard size) of crushed pineapple, drained
280g walnuts, slightly crushed
280g shredded coconut

for the icing
125g unsalted butter, at room temp
175g cream cheese, at room temp
525g icing (confectioners) sugar
2 tsp vanilla extract
fresh fruit for decorating
