For the Cake:
2 1/4 cups cake flour
1 1/2 cups sugar
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon cinnamon
3 eggs
2 teaspoons vanilla extract
½ cup pecans ( chopped )
1 1/2 very ripe bananas
1 cup vegetable oil ( plus 2 T )
8 oz canned crushed pineapple
Cream Cheese Frosting:
2 lb. powdered sugar
1/2 cup salted butter ( at room temperature )
16 oz cream cheese ( at room temperature )
1 T vanilla extract
