Tomatoes filled with flavorful mixed vegetables simmered with spicy sauce makes a gourmet, delectable and mouthwatering dish. Serve this with roti, paratha or any flat bread. This flavorful dish is sure to be a crowd pleaser!

For Stuffing
4 Tomatoes
2 medium sized boiled and mashed potato
2 tbsp. grated cottage cheese
½ tsp. fine chopped green chillies
1 tbsp. fine chopped coriander leaves
Salt to taste
1/4 tsp. cumin powder
1/4 tsp. garam masala
1/2 tsp. red chilli powder
For Gravy
Tomato onion paste ( grind one onion, two tomatoes, 1 green chilli in grinder)
1 tbsp. giger garlic paste
1/4 cup cashew paste
Salt to taste
½ tsp. red chilli powder
1 tsp. coriander powder
1/4 tsp. turmeric powder
½ tsp. cumin seeds
1 tbsp. clarify butter or ghee
1/2 tsp. garam masala
Water – as per requirement
For Garnishing
Grated cottage cheese

For Stuffing
Take a 3-4 red tomatoes and scoop out the pulp.
Apply salt on inner side of the tomato and keep it upside dow to take out extra moisture .
Now mix rest of the ingredients of sutuffing and make a fine mixture.
Take tomato ine by one and fill the mixture in it.
Grill the tomato in microwave and keep them aside.
For Gravy
Heat the ghee in the non-stick pan.
Add cumin seeds and saute.
Add ginger garlic paste and saute.
Add onion tomato paste and saute.
When this paste start leaving ghee, add cashew paste and other spices and mix well.
Now add water as per requirement.
Cook it until you get desired consistency of gravy.
Put it off the flame.
Serving
While serving take a stuffed tomato in a serving tray and pour the gravy on it. Garnish with grated paneer.
Serve hot with naan.
