Indian Navaratna Korma by Neharika

Navratna korma is my all time favorite vegetable. I like its name specially, because it sounds very royal. It is named so because it is made of nine different vegetables. And unlike , other vegetables, it is slightly sweeter in taste.

4 and 1/2 cup vegetables( mixture of potatoes, carrots, french beans, cauliflower, pineapple, cabbage, capsicum, peas, tomatoes)
1/4 cup grated paneer(cottage cheese)
1/4 cup cream
1 cup onion ginger garlic paste
1 cup milk
1/2 cup ghee
1/2 cup coarsely ground cashew nuts
1/4 cup cashew nuts (vertically divided into 2 halves)
1/4 cup pineapple cubes ( for garnishing)
Salt To Taste
1/2 tsp. Turmeric Powder
1 tsp. Red chilli powder
1 tsp. Coriander powder
Chop and boil all the vegetables in a pressure cooker Open the cooker and drain extra water and keep the vegetables aside. Heat a pan and add ghee. Then add onoin garlic ginger paste and saute for 2 mins. Now add all the vegetables and fry it for 1-2 mins. Add salt and mix and close the lid. Keep it for 5 mins. Then add other spices and grated paneer and mix. Add cashew nuts, both ground and halves. Add rest of the ingredients except pineapple cubes , and mix well. Put off the flame and close the lid. Serve it in a bowl and garnish with pineapple cubes.
