Individual Chocolate Cobblers

I had the misfortune of attending a work conference in Kansas City MO last week. BUT, I had the fortune of attending a dinner theatre at the New Theatre in Overland Park. They served the BEST chocolate cobblers. It's is a mix between the best gooey chocolatety brownie that you have EVER had mixed with a chocolate lava cake. OMG, it was delicious. I went on to their website to see if they would give me a copy of the recipe and low and behold the recipe was on their website. I haven

COBBLER
8 large eggs
1 TBL vanilla
4 cups sugar
1 cup flour
1 cup cocoa
1 1/2 lb butter; melted
TOPPINGS
vanilla bean ice cream
toasted slivered almonds
chocolate toffee bits
•Combine all ingredients except the margarine in a mixing bowl and mix with an electric mixer •Slowly add the melted margarine as it continues to mix •When all is incorporated, allow the batter to mix 10 more minutes on a medium speed •Refrigerate this mixture overnight •Spray 12 large ramekins with cooking spray •Divide the batter evenly into the ramekins (between one-third and on- half up cup each) •Using an ice cream scoop works best for getting batter into cups •Bake uncovered at 400 degrees for 40 minutes TOP with ice cream, almonds and toffee bits! BEST WHEN SERVED WARM!
