Individual Slow Cooker Biscuit Pot Pies

Slow cook the pot pie filling while you work and treat everyone to a home cooked meal no matter when they are home for dinner!

3 cups carrots & celery, chopped
1/2 cup pancetta, diced {if desired}
1 tbsp olive oil
1 tbsp butter
1 onion, diced
3 cloves garlic, minced
1 cup chopped baby bella mushrooms
1/4 cup flour
3 cups chicken stock
3 cups cooked chopped chicken or turkey
1 can of pre-made biscuits (I used Trader Joes' brand)
Add the oil and butter to a large heavy bottomed skillet and place over medium high heat. Add the pancetta and saute for 2-3 minutes or until just starting to brown. {Skip this step if you dislike pancetta....
