Italian Pork Roast

I love to cook a good Roast, what's a good roast? Well I can pick it up and tell by the look of the meat, don't pick a grainy piece of meat, but it should have some fat for good flavor. Then the secret is the cooking, and the seasonings, I like a lot of seasonings, pepper and some salt, meat needs salt. This Roast is flavorful, juicy and makes a great gravy.

What you Need:
1 (3 to 3 1/2 lb.) boneless pork loin roast(I use any kind of pork roast that is a good buy)
4 cloves garlic, halved
1 large onion
1 T. olive oil
1 to 2 T. dried Italian seasoning
1 tsp. coarsely-ground pepper
1 tsp salt
