Jam & Coconut Cookies made in a food processor. Super quick and easy

For the cookies;
1 ½ cups (120g) dessicated coconut
2 cups (260g) plain (all purpose) flour
1 teaspoon baking powder
1 cup (200g) white sugar
115 g (1 stick / half cup) unsalted butter, cold & cut into cubes
1 egg
1 teaspoon vanilla extract
2 teaspoons cold milk
Filling;
½ cup (115g/1 stick) unsalted butter, room temp
2 cups icing (confectioners) sugar, sifted
2 teaspoons vanilla bean paste (or extract)
2 ½ tablespoons cream (see notes)
pinch of salt
½ cup strawberry jam
Extra icing (confectioners) sugar, for sprinkling over the top
Preheat the oven to 180C / 350F (160C fan forced). Line 2 baking trays with baking paper. Tip the coconut into the food processor, and process on high for around 20 seconds just to make it a little finer....
