3 layers: Jell-O, cheesecake, and a nutty crust.

Crust:
1 1/2 sticks of butter
1/2 cup brown sugar, packed
1 1/2 cup flour
1 cup chopped walnuts or macadamia nuts (I like macadamia nuts)

Cheesecake Filling:
1 3oz package of lemon Jell-O
1 cup hot water
1 cup powdered sugar (can reduce to 3/4 cups)
1 8 oz package cream cheese or Neufchatal cheese (softened)
2 cups of heavy cream (1 pint)

Jell-O Topping:
1 6 oz package of strawberry Jell-O (I have also used Lime)
3 cup hot water

These easy shrimp rolls are a delicious lunch or dinner when served alongside coleslaw, potato chips, hush puppies or pickles!

2 T salted butter
1 lb. peeled and deveined cooked shrimp
1 stalk celery
2 green onions
1/3 c mayonnaise
1 t lemon juice
1 t white vinegar
1 T minced fresh dill
1/4 t Old Bay seasoning
