This is one of my favorite sweets - Kesar peda, Milk peda with unique color and flavor of kesar or saffron in it. Usually when I think of peda its along process of reducing milk, but this one is so easy and it is prepared in a matter of half an hour. The kesar peda is prepared with ricotta cheese and is very easy and quick to make. I haven\\\'t used any food color, but 2- 3 drops of yellow food color can be used for nice looking yellow peda.

Ricotta cheese - 2 lb.
?Ghee / clarified butter - 4 tablespoon
Sugar - 2 cups
Milk powder - 1 cup
Milk - 2 tablespoons
Saffron - a generous pinch
cardamom powder - 1 teaspoon
Pistachios - for garnishing ( optional)
1. Heat ghee in a pan once it is hot add the ricotta cheese, sugar and milk powder. 2. Stir frequently?? so that it doesn\\\'t get burned. 3. Boil milk in another pan, add saffron to it and let it rest...
