Key Lime Bundt Cake

This is a delicious key lime cake. So moist and refreshing! Perfect for a Spring brunch!

3 eggs
1 6oz container key lime yogurt
3 yogurt cups of flour
2 yogurt cups of sugar
1 1/2 baking soda
1 yogurt cup of oil- I used coconut oil but you can use vegetable or canola
2 tsp Lime zest
1 table spoon Lime juice
1 -3oz box lime jello
I container Pillsbury creamy key lime frosting
Mix the sugar, yogurt, eggs and oil with hand mixer. Then add the additional ingredients together and blend. Pour into a greased and floured bundt pan. Bake for 30-40 min until golden. Heat the frosting for about 15-30 seconds or till you can pour nicely. Pour all over cake. Top with additional lime zest.

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
