Kung Pao Chicken Nuggets & Rice

With only chicken nuggets in the house and a bad craving for Chinese food, this is what I came up with.

5 chicken nuggets
2 tsp oil
1 garlic clove, minced
1/2 tsp finely chopped ginger
1/4 cup peanuts
1 tsp cornstarch
2 tsp brown sugar
1 tsp red pepper flakes
2 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp water
2 tbsp sliced green onions
1 cup cooked rice
Heat up the chicken nuggets in the microwave until hot and cut into bite sized pieces. Stir together the cornstarch, brown sugar, and red pepper until combined. Add the soy sauce, vinegar, and water and mix. Add in the garlic and ginger. Heat up a pan with the oil and add the chicken nuggets and peanuts. Saute for a couple minutes and add the rice. Cook for another minute. Pour in the sauce and stir. Cook until the rice is warm and has soaked up the sauce. Stir in green onions.

3 slices thick cut bacon
1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
1/2 t Worcestershire sauce
2 c fresh or frozen okra
salt and pepper ( to taste )
