Layered Chicken Taco Salad

Scoop it as a dip with tortilla chips or dig right in with a fork. Tastes just like eating a taco and you can customize it for you and your family with different toppings and ingredients!

2 tablespoons olive oil
2 boneless, skinless chicken breasts, diced
1 cup black beans, drained and rinsed
3 tablespoons taco seasoning
3/4 cup water
1 head of Romaine lettuce, chopped
2 Roma tomatoes, seeded and diced
1 1/2 cups shredded Mexican blend cheese
1 cup Santa Fe tortilla strips (optional)
sour cream and salsa (optional)
In a medium skillet over medium, heat the olive oil and add diced chicken. Cook until browned, add the black beans, taco seasoning and water. Simmer for about 10 minutes until sauce is slightly thickened....
