Leek, Shallot and Garlic Risotto

Creamy and delicious! The fresh herbs and the flavor from the leeks and shallots makes this a comforting dish you will make over and over again.

ΒΌ cup olive oil
2 leeks, cleaned and sliced
1/4 cup shallots, finely chopped
1 clove garlic, pressed
1 cup Arborio rice
1/4 cup white wine
4 cups chicken broth (I used homemade turkey)
2 tablespoons butter
1/4 cup Parmesan cheese (*note to self, next time use 1/2 cup)
Salt & pepper to taste
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chopped oregano, chopped
1 tablespoons fresh chopped basil, chopped
