Lee's Lemon Hand Pies

I grew up with a dad who LOVED to cook. One of my favorite memories is of his Lemon Meringue Pies. They were very tart and scrumptious. AS a matter of fact. my brother, Lee, would have this pie instead of a Birthday Cake. I now live 8 hours from home. Dad has been gone for a number of years, and it has been more than 6 years since I was able to bake this pie for Lee's birthday. With all of the "Hand Pie" recipes I have read, I figured I would be able to adapt Dad's recipe

FILLING
4 1/2 oz Jello Cook and Serve Pudding (You may need to use two 3.25 oz packages. Just don't double anything else.)
3/4 C Sugar
1/2 C Water
1/4 tsp Lemon Extract
2 C Real Lemon Juice (Yes, 2 CUPS . . . I said it was TART!)

PIE
2 pkg Refrigerated Pie Crusts (You will use all 4 crusts.)
1 Egg
Cookie Cutter (At least the size of your palm.)
Parchment Paper

GLAZE
1/2 - 1C Confectioners Sugar
1/2 tsp Vanilla Extract
3T Milk (1T at a time . . you want it thin enough to drizzle but not watery.)
Directions: 1. Preheat an Oven to 400 degrees. 2. Unroll 1 pie crust at a time on parchment paper. Using the cookie cutter, cut as many shapes as you can from the pie crust. (I get about 6 shapes per crust...
