Leftover Turkey Pot Pie

A quick and easy way to use up leftover turkey or chicken. This entire dish is made in one pot!!!

1 tbsp butter
1 small onion, chopped
2 medium carrots, peeled & chopped
1 celery ribs, chopped
1 tbsp flour
1 tsp dried thyme
½ tsp pepper
2 cups shredded cooked turkey
2 cups of chicken (or turkey) broth
1 cup milk
½ cup frozen peas
1 can (16 oz) premade biscuits, separated
