Lemon-Almond Pancakes

Ready to change up your same-old whole wheat pancake routine? Try these "refreshing" and healthy lemon-almond pancakes.

Dry Ingredients:
1 cup sliced raw almonds
½ cup old-fashioned oats
1 cup whole-wheat flour
2 tablespoons ground flaxseed
1 ½ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt

Wet Ingredients:
3 eggs
1 cup milk
½ cup ricotta cheese
3 tablespoons pure maple syrup
1 teaspoon vanilla
Zest & juice of 1 large lemon
Blend almonds and oats in a blender or food processor until you have coarse flour. Add the almond-oat flour and other dry ingredients to a large bowl and whisk until blended. In a separate bowl whisk together all wet ingredients, then add the wet mixture to the dry mixture and mix again. Cook on a griddle & serve with berries and strawberry syrup, or any other favorite pancake topping!
