These lemon basil cupcakes combine a fun lemon flavor with a slight hint of basil. Folded whipped cream added to the frosting helps keep these light and perfect for spring or summer!

For the cake:
1/2 cup butter, softened
1 cup sugar
1 egg + 1 yolk
1/2 teaspoon vanilla extract
1/4 teaspoon lemon extract
1-3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup water
3/4 cup sugar
1/3 cup lemon juice
7 fresh basil leaves
1 lemon, zested into strips
For the Frosting: 2 cups powdered sugar
3 tablespoons soft butter
1/2 teaspoon vanilla extract
1/4 teaspoon lemon zest
1/8 teaspoon lemon extract
3 tablespoons lemon basil syrup
1-1/4 cup heavy cream, whipped
