A moist lemon muffin loaded with healthy chia seeds and greek yogurt and swirled with homemade strawberry jam. Poppy seeds can be substituted for the chia seeds, if desired.

1 cup greek yogurt, plain
2 eggs
1 tsp. vanilla extract
1 tsp. lemon extract
1/4 cup vegetable oil
1/3 cup strawberry jam
1 tsp. cinnamon, for topping
