!Wet Ingredients
1 1/2 cups (350g) milk
Zest of 3 lemons (30g), sliced off with a vegetable peeler
1 inch piece (5g) fresh ginger root, peeled and thinly sliced
2 small OR 1 1/2 large (80g) eggs, blended
2 1/2 tablespoons (25g) neutral vegetable oil OR melted butter
!Dry Ingredients
2 cups (250g) instant flour (Wondra is a popular brand)
1/4 cup (25g) powdered sugar
1/2 teaspoon (3.5g) salt
3/4 teaspoon (3g) baking powder
0.2g xanthan gum, optional
2 tablespoons (30g) black sesame seeds
Cream whipper with 2 cream chargers (N2O)
!For the Black Sesame Sugar
1 tablespoon (12g) brown sugar
1 tablespoon (14g) white sugar
1 tablespoon (15g) roasted black sesame seeds
!For the Lemon Syrup
1/3 cup (80g) lemon juice
3/4 cup (280g) water
2/3 cup (130g) sugar
