If you need a Spring pick-me-up, you MUST try these heavenly lemon blueberry cheesecake bars. The filling is to-die for, and the streusel topping leaves a fabulous crunch in your mouth!

2 packages {8oz each} cream cheese, softened
2 eggs
2 tbsp grated lemon peel
1/4 cup fresh lemon juice
1/2 cup granulated sugar
1 cup blueberries {fresh or frozen}
