Lemon Blueberry Cornmeal Butter Cake

Lemon + Blueberry is one of my favorite summer flavor combinations, and they come together beautifully in this awesome brunch cake! I love the texture that the cornmeal imparts on this, and can’t wait to have a piece with a hot cup of coffee this morning.

1 stick salted butter softened
1 cup all-purpose flour
1/2 cup P.A.N. cornmeal
2 teaspoons baking powder
1 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
1 teaspoon freshly grated lemon zest
1/3 cup sour cream
2 cups fresh blueberries
Streusel
1/2 cup sugar
6 tablespoons all-purpose flour
2 tablespoons cornmeal
1/4 teaspoon ground cinnamon
4 tablespoons cold butter cubed
Preheat over to 350. Place all of the cake ingredients (minus the blueberries) into a mixer, and mix on low speed for 2 minutes - or until well combined. Gently fold in the blueberries to the batter. Mix...
