Light and fluffy pancakes - great combinations of flavors. Would be perfect for a special occasion.

- 1 cup whole milk ricotta
-1 cup whole milk
-3 eggs, separated
-1/4 cup sugar
-zest and juice of one lemon
-1 ½ cups cake flour
-1 T baking powder
-1/4 t salt
-blueberries (up to a pint)
