Lemon Broccolini, Chicken and Potato Bowl

A vibrant meal bowl including lemony roasted potatoes and broccolini, topped off with grilled chicken! Skip the chicken and make it a vegetarian meal or side dish.

1 lb fingerling potatoes (halve the large ones to ensure even cooking)
1 lb broccolini, trimmed
1.5 T olive oil
1/8 tsp black pepper
1/4 tsp salt
1 small red onion, sliced thinly


3 chicken cutlets
1 T salt free seasoning
1/8 tsp black pepper
Zest of 1 lemon

1 garlic clove, minced
Juice of 1 lemon (about 2 T)
2 T extra virgin olive oil
1 T thyme, fresh
