This is one of my son’s favourite cakes. It’s light and moist. A real special treat after school or for yourself with a cup of tea.

100g unsalted butter
150g self-raising flour
3-5 tbsp. of milk
150g caster sugar
2 eggs
Juice from 1 lemon and lemon zest
