Lemon Cheesecake French Toast Roll Ups

An easy lemon cheesecake is cooked inside french toast to make a fun breakfast treat.

16 slices of bread
2 eggs
1/4 cup milk
4 ounces cream cheese ( softened )
2 Tablespoons sugar
1/2 cup lemon curd
1/2 cup sugar
1 Tablespoon cinnamon
8 Tablespoons butter

Trim the crust from the bread slices. Use a rolling pin to roll them flat. Whisk together the eggs and milk. Beat the cream cheese and 2 Tablespoons sugar until creamy. Stir in the lemon curd. Stir together...
