2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup canola oil
1 teaspoon lemon extract
1/3 cup sugar
1 egg
1 cup milk
1 tablespoon lemon zest

1/4 cup white sugar
2 tablespoons butter, (softened, but not melted)
1 tablespoon lemon zest
