These Lemon Curd Bars have a shortbread crust and lemon curd filling with a coconut and toasted almond crumb topping. A bright and delicious citrus treat!

lemon curd:
3/4 cup sugar
1 tbsp lemon zest
3/4 cup lemon juice
1/2 cup (1 stick) unsalted butter ( cut up into cubes )
3 eggs
crust & topping:
1 cup butter (2 sticks), softened
1 cup sugar
2 cups all-purpose flour
1/2 tsp baking soda
2/3 cup coconut flakes
1/2 cup sliced almonds ( toasted )
