LEMON POPPY SEED RASPBERRY MUFFINS

Tender, moist, lemon poppy seed raspberry muffins with a simple lemon glaze. The batter stores well in the fridge so you can have freshly baked muffins every morning!

2 cups all purpose flour
1 cup pastry flour
1 1/2 cups granulated sugar
1 tbsp baking powder
1 tsp baking soda
1/4 tsp salt
3 tbsp poppy seeds
3/4 cup fresh or frozen raspberries
3/4 cup butter ( melted )
2 eggs
1 tbsp lemon zest
1 tsp vanilla
1/2 cup fresh lemon juice
1 1/2 cups buttermilk
2 tbsp granulated sugar ( for sprinkling )
Lemon Glaze
Juice from 1/2 a lemon
1 cup Icing sugar
