This Lemon Pull Apart Coffee Cake is light and fluffy, tastes like summer and has a perfect balance of sweet and tangy, which I love!

For the sweet yeast dough
½ cup (120ml) milk
½ cup (120ml) water
½ cup (100g) granulated sugar
2 packages instant yeast (1 packet = 2 and ¼ teaspoons)
5 tbsp (80g) unsalted butter, softened to room temperature
2 large eggs
1 tsp salt
4 and ½ cups (562g) all-purpose flour, plus more for dusting/rolling
For the lemon filling
5 tbsp (80g) unsalted butter, softened to room temperature
¾ cup (150g) granulated sugar
2 tbsp lemon zest
1 teaspoon vanilla extract
For the lemon glaze
1 cup (120g) confectioners\' sugar
Juice of one medium-sized lemon (2-3 tbsp)
