Lemon Rice Salad

Lemon Rice Salad can be converted from a side salad to an easy dinner by simply adding cooked chicken to this already delicious dish.

1/4 cup shallots, slice thin
3 Tablespoons olive oil, divided
1 cup cup long grain rice, rinsed well
2 cups chicken broth
1 Teaspoon lemon zest
Juice of 1/2 one small lemon
1/3 cup chopped cilantro
1 Teaspoon minced garlic
1/2 cup finely chopped red onion
1/2 cup diced red pepper
1/4 cup grated Parmesan cheese
salt and pepper to taste
