The ricotta keeps this lemon loaf incredibly moist. This is a must try!

1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 1/2 sticks of butter, room temperature, plus more to grease the pan
1 1/2 cups whole milk ricotta cheese
1 1/2 cups + 1 tablespoon sugar
3 eggs
1 teaspoon vanilla extract
zest of 1 lemon
2 tablespoons fresh lemon juice
