Lemon Shortbread Sandwich Cookies

Lemon Marshmallow Filling sandwiched between two lemon infused Scottish shortbread cookies is a must this spring!

6 C. all-purpose flour
1 C. granulated sugar
1 lb (4 sticks) butter, slightly softened and cut into slices
1 tbsp. lemon zest
2-3 egg yolks
Lemon Marshmallow Filling
1/2 C. butter, softened
1 3/4 C. powdered sugar
1 cup Marshmallow Fluff
1 tbsp. fresh lemon juice, slightly more if you like a strong lemon flavor

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
