Lemon Tea Cookies

I LOVE lemons! They're so refreshing and tangy. I have so many savory recipes that call for lemon, but not many that are sweet. Since I love lemons, and I'm a self-proclaimed cookie monster, these cookies really hit the spot for me. They have a light, cake-like texture, and I love the toasted coconut on top. These Lemon Tea Cookies go great with an afternoon cup of tea or coffee.

Cookies:
1 1/2 tsp. white vinegar
1/2 cup milk
1/2 cup butter or margarine
3/4 cup granulated sugar
1 egg
1 tsp. lemon zest
1 3/4 cups sifted all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 cup toasted coconut
Glaze:
3/4 cup granulated sugar
1/4 cup lemon juice
1 1/2 tsp. white vinegar
1/2 cup milk
1/2 cup butter or margarine

1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 cup toasted coconut
Glaze:
3/4 cup granulated sugar
1/4 cup lemon juice
Stir vinegar into milk. Cream butter and sugar until fluffy. Beat in egg and zest. Sift together dry ingredients and add to creamed mixture, alternating with milk. Beat after each addition. Using a teaspoon, drop batter two inches apart onto ungreased cookie sheet. Bake at 350 for 12-14 minutes. Remove at once from sheet. While cookies are baking, prepare lemon glaze. Thoroughly blend sugar with lemon juice. When cookies are baked and removed from sheet, brush tops with glaze and sprinkle with toasted coconut. Makes 4 dozen.
