Lemon Thyme Potato Salad

Potato salad featuring fresh thyme, goat cheese and lemon.

1 pound red potatoes, cubed
1/2 cup plain Greek yogurt
1/2 cup light mayonnaise
1/3 cup thinly sliced red onion
1/4 cup crumbled goat cheese
1 tablespoon lemon zest
1-2 tablespoons lemon juice
1 tablespoons minced fresh thyme
1 clove garlic, minced
Salt and pepper, to taste
Cook potatoes in a pot of boiling, salted water until just tender, 10-12 minutes. Rinse with cold water and drain. In a medium bowl, stir together yogurt and mayonnaise. Add potatoes and toss to coat well....
