A deliciously healthy, meat-free meal! These tacos quickly became a family favorite, even though lentils were completely foreign to us! This lentil taco mixture also freezes nicely, so make a double batch, and freeze some for another date (saves you some precious time!).

2 TBL olive oil
1/2 cup chopped onion
1 garlic clove, chopped
1 cup lentils
1 tsp-1 TBLS chili powder
1 tsp cumin
2 1/2 cups chicken or vegetable broth
1 cup salsa
Optional taco ingredients:
flour or corn tortilla shells
sour cream
cheese
hot sauce
shredded lettuce
diced green bell peppers
black beans
