Enjoy your favorite breakfast without all the fat. These are lightened biscuits with chicken sausage and gravy. You won't blow your diet with this healthy breakfast.

Biscuits:
1 ¼ (150 grams) cups all-purpose flour
1 cup (120 grams) whole wheat pastry flour
1 tbsp. baking powder
½ tsp. baking soda
1 tsp. kosher salt
4 tbsp. light butter or vegan butter, grated then frozen
½ cup club soda or seltzer water
¼ cup almond, buttermilk or fat-free milk

Gravy:
8 chicken or turkey sausage patties
1 can evaporated skim milk
¼ tsp. sage
Pinch fennel pollen, optional
2 tsp. Wondra flour
