Lightened Up Breakfast Casserole

A perennial breakfast staple in the South. This version is a lot lighter than the original, but no less flavorful. We swap in turkey sausage, whole wheat bread and skim milk.

4-5 slices whole grain wheat bread
8 eggs
¼ cup skim milk
½ cup shredded mild cheddar cheese
tsp. salt
½ tsp. black pepper
16 oz. lean turkey sausage

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
