This Lightened Up Shepherd’s Pie is the perfect, healthy weeknight meal that comes together in just 30 minutes! Crispy, baked sweet potato skins are filled with a light turkey and vegetable mixture, packed with flavor and light on calories!

4 Sweet Potatoes
1 lb. Lean Ground Turkey
3 Garlic Cloves, minced
1 Onion, diced (yellow or brown)
1 Large Carrot, diced into 1 inch pieces
½ Cup Corn
1 Cup Cauliflower, chopped
½ Cup Green Beans
2 Tablespoons Butter
2 Tablespoons All-Purpose Flour
1 Cup Low Sodium Beef Broth
1 Tablespoon Worcestershire Sauce
2 Tablespoons Tomato Paste
1 Tablespoon Paprika
